Vegetarian Potstickers

Vegetarian Potstickers
All you need:
1/2 cup of finely shredded carrot
1/2 pound of firm tofu
1/4 cup of finely chopped water chestnuts
1/2 cup of finely chopped bok choy
1/4 cup of finely chopped garlic chives
1/4 cup of finely chopped bamboo shoots
1 tablespoon of dark soy sauce
2 cloves garlic, peeled and minced
1/4 teaspoon of salt
2 tablespoons of oil for frying the dumplings
1/2 teaspoon sesame oil
1 package potsticker or gyoza wrappers

How to prepare:
Take tofu make cubes and mash, then wash the vegetables, mix tofu with rest of the ingredients and seasonings. Then lay out one of the gyoza wrappers before you, by dipping your finger in water moisten the edges of wrapper.. In the center of wrapper place a heaping teaspoon. Then over the filling, fold out the gyoza wrapper , then to seal and shut pinch the edges. Take a large skillet and wok, heat 2 tablespoons of oil , the time oil is ready , add the dumplings and cook them on high heat and make it brown,add 1/2 cup of water and cover, without turning the dumplings over, then cook it for about 1 min, so that raw filling get cooked then uncover it and cook till the liquid is absorbed. Its time to serve the potstickers , should have burnt side on the top with potsticker dipping sauce.

Beef Teriyaki

Beef Teriyaki
All you need:
1 15-ounce of can pineapple chunks with juice
1/4 cup of brown sugar
1 pound of beef, cut in 1 inch cubes
1/2 cup of soy sauce
1/2 teaspoon of minced ginger
1 clove of garlic, minced
2 teaspoons of sesame oil

How to make:

Add all the ingredients along with liquid from pineapple, and marinate, refrigerated and covered for 3 hours, then thread pineapple and beef alternately on skewers, leave the rest of the marinade. For about 8 min broil it just turn it once till the beef get cooked.

* First of all remove the skin of lotus seeds with your fingers, take out the green bud from the centre.

* In a pan put some water and boil it, then add sugar and stir properly, now its time to add the lotus buds and make it simmer for forty min.

* After that add eggs to form an egg flower, when egg sets put into a serving bowl and serve it hot.

All you need:

* 15g ginger, finely chopped

* 30g of shallots, finely chopped

* 2 tbsp oil

* 2 tbsp of oyster sauce

* 1 ½ tsp chicken stock powder

* 1 tbsp of sesame oil

* 300 ml of water

* 1 ½ tsp of light soy sauce

* 300g of barbecued pork (char siew)

* 1 tsp of natural sea/rock salt

* 30g of spring onions, sliced

* 2 tbsp Hong Kong flour

* 80g of sugar

* 2 tbsp of water chestnut powder

Pastry:

* 250-270ml of water

* 2 tsp of bread improver

* 80g of caster sugar

* 80g of instant dried yeast

* 1 grade of A egg, lightly beaten

* 60g butter of softened

* 20g of milk powder, sifted

* 1 tsp of salt

* 500g high of protein flour, sifted

Topping with cream:

* 120 icing sugar, sifted

* 1 grade A egg, lightly beaten

* 120g margarine, softened

* 1/8 tsp salt

* 1 tbsp of milk powder

* ¼ tsp of baking powder

* 200g low protein (cake) flour

How to make:

For filling:
Heat the oil an a wok, saute ginger, shallots and onion make it fragrant, then add , dark and light soy sauce,chicken stock powder, sesame oil and oyster sauce. Mix it properly, then add pork and water , make it simmer until almost dry. Add the Hong Kong flavour to make the gravy thick, water chestnut powder with a little water put it to the wok.
Now add spring onions, and season it with salt and sugar,keep it aside.

For Pastry:
In a mixing bowl knead pastry ingredients to give a smooth elastic dough. Cover it and rest for 10 min,make balls.

For Topping:
Take a bowl, now mix margarine, salt and icing sugar slowly mix in the egg . Then fold in baking powder, flour and milk powder.

To assemble:

* Start with filling dough balls with the cooled filling,reshape just leave to slight rise before piping on the topping cream.

* Side aside to proof.

* After that bake it in a pre heated oven at 200 degree Celcius for 10 to 12 minutes.

Yangchow Fried Rice

Yangchow Fried Rice


* 6 ounces roast pork
* 4 ounces of frozen medium shrimp
* 3 large eggs

For Shrimp Seasonings:

* 1/2 teaspoon of cornstarch
* Salt and freshly ground black pepper, to taste
* 1 medium yellow onion, diced
* 5 tablespoons oil for stir-frying, or as needed
* 1/2 cup of peas, fresh or frozen
* 4 cups cold cooked rice

How to make:

Beat the eggs lightly, keep them aside, now Dice the barbecued pork.
Then rinse the shrimp in running warm water , then shell,devein and chop it finely.
Add seasonings like 1/2 teaspoons cornstarch, salt, pepper to shrimps and toss.
Heat and add 1 tablespoon oil, when oil is hot, add shrimp and let it make pink , fry and stir properly. keep the shrimp up to the side now add roast pork.
Then remove from pan.
Now heat the wok add 2 tablespoons oil. When the oil is hot,add onion, fry and stir let it be soften , now add peas, fry till peas become green.
Now heat oil take two tablespoons in the wok, add cooked rice, keep stirring to separate the individual grains.
Do not make the rice turned brown , now its time to add beaten egg, stir poorly so that all the rice grains are covered.
Now you can add roast pork, onion and vegetables, shrimp in a pan, mix properly Serve hot.

Gobi Manchurian

Ingredients:

• 1 Medium cauliflower
• 3/4 Cup maida
• 1-1/2 tbsp Garlic paste
• 2 tbsp Oil
• 1 tbsp Corn flour
• 1-1/2 tbsp Ginger paste
• 1 Cup finely chopped onions
• 1/4 tsp Ajinomoto
• 1 Chopped green chili
• 2-3 tbsp Tomato sauce
• 2 tbsp Soya sauce
• Finely chopped coriander leaves for garnishing
• Salt to taste
• Water as required
How to make Gobi Manchurian:

Gobi Manchurian

Process:

Wash and cut cauliflower

Add maida, cornflour, salt and water to make a fine paste

Add a tsp of ginger and garlic paste to it.

Dip cauliflower pieces in the paste and deep fry until golden brown

Heat oil in another pan and add the remaining ginger and garlic paste, chopped onions and green chili

Now, combine ajinomoto, soya sauce and tomato sauce

Add fried cauliflower and mix well

Garnish cauliflower Manchurian with coriander leaves.

Chinese Scrambled Eggs with Chives

Ingredients

* 1 1/2 - 2 ounces Chinese garlic chives (to make 1/3 cup chopped)
* 4 large eggs
* 1 1/2 teaspoons light soy sauce or up to 1/2 teaspoon salt
* freshly ground black or white pepper, to taste
* 1 teaspoon vegetable oil
* 2 tablespoons vegetable or peanut oil

Preparation

Chinese Scrambled Eggs with Chives

Chinese Scrambled Eggs directions:

Wash and drain the garlic chives. Remove the hard ends and any wilted green leaves at the top and chop into 1-inch lengths until you have 1/3 cup (5 tablespoons).

Lightly beat the eggs. Add the soy sauce or salt,

1-teaspoon vegetable oil and pepper.

Heat a heavy skillet on medium high heat. Add the remaining 2 tablespoons oil, lifting the frying pan so that the oil covers the bottom of the pan. When the oil is hot, add the chives.

Stir-fry briefly, and then add the beaten egg mixture.

Reduce the heat to medium and gently scramble the eggs. Remove them from the heat when they are just done but still moist. Serve hot.

Chicken Momos

Momos are made with white flour and water dough, to give more doughy texture. Momos can be both veg and non veg, it depends upon the filling mixture. Different kinds of meat fillings like chicken and pork are frequently used. Vegetable momos consists of potato, onions , garlic and tomato fillings. Filling is then enclosed either in a round pocket, crescent or in a half moon shape. To make chicken momo:

Chicken Momos
All you need:

* 500 gm Plain wheat flour/maida

* 1 Inch ginger, chopped

* 250 gm Chicken, boiled and minced

* 2 Onions, chopped

* 2 Cloves garlic, chopped

* 2 Green chilli, chopped

* Salt to taste

* 1 tsp Soya sauce

* 1 tbsp Oil

How to make:

* Take a bowl, combine flour, salt and oil.

* Add water to make soft dough.

* Chop onions, garlic, green chillies and ginger.

* Add minced chicken and soya sauce and mix well.

* Keep it aside.

* Make small balls from the dough.

* Roll the balls into a small round and place the filling in the middle.

* Seal it , steam in a momo steamer for about 20 min.

* Chicken Momos are ready, serve them with garlic sauce.

* Enjoy!

Sesame Chicken with Chinese cabbage and Broccoli

It is a sesame chicken with Chinese cabbage and broccoli which is very famous in Chinese dishes

Ingredients:

Chinese Chicken

* 1/4 c. soy sauce
* 2 tbsp. rice wine or dry sherry
* 2 tbsp. sesame oil
* 1 clove garlic, minced
* 2 tsp. minced fresh ginger root
* 1 tbsp. sugar
* 1/4 c. toasted sesame seeds
* 2 whole chicken breasts, skinned, boned, and cut in bite-size pieces
* 3 tbsp. peanut oil
* 1 c. green onions, cut in 1 inch lengths
* 3 c. sliced fresh broccoli flowerettes
* 3 c. Chinese cabbage
* 2 tsp. cornstarch, dissolved in 2 tbsp. water

Directions:

1. Trim Chinese cabbage of all but 1 inch of green tops and slice diagonally; slices diagonally in 1/2 inch pieces
2. In medium bowl, stir together soy sauce, dry sherry, sesame oil, garlic, ginger, sugar, and sesame seeds. Add chicken and marinate at least 1 hour.
3. In a wok or skillet, heat peanut oil over medium heat for 2 minutes.
4. Add onions, broccoli, and cabbage. Stir fry 1 minute. Transfer to dish; set aside.
5. Add chicken mixture to wok or skillet (add more oil if needed). Stir fry until pinkness is gone, about 3 minutes.
6. Remove to dish with slotted spoon. Dissolve cornstarch in water. Add to liquid in wok. Cook, stirring constantly, until mixture boils and thickens.
7. Return chicken and vegetables to sauce. Cook, stirring constantly, 1 minute.

* 3/4 lb. raw med. shrimp, peeled, deveined, and finely chopped

* 1 tsp. gingerroot, finely grated, or 1/4 tsp. ground ginger

* 1 tbsp. Sake, rice wine

* 3 tbsp. onion, finely chopped

How to make:

* In a medium bowl mix all seven ingredients.

* In the center of each wrapper put 1 tbsp. filling , fold all the edges upto the center.

* With cooking spray, spray a 9" bamboo steamer , keep the steamer is a large wok over simmering water.

* Then its time to arrange 10 dumplings, should not touch the sides of steamer.

* Cover it for 15 min.

How to Cook Spring Rolls

Spring Rolls
All you need:

* 2 oz. thinly sliced pork, cut into thin strips

* 1 tsp coy sauce and cornstarch

* 8 spring roll skins

* 1 tsp Chinese rice wine or sherry

* A few grain of pepper

* 2 ½ oz. boiled bamboo shoots, cut into strips

* ½ tsp salt

* 2 dried large Chinese mushrooms, soaked in water and drained. Cut into strips.

* 2 cabbage leaves, cut into strips

* Oil for deep frying plus 3 tbsp more oil

* Flour-and-water paste


How to make:

* Combine the pork with some grains of pepper, chinese wine , coy sauce and cornstarch.Keep it aside for 15 min.

* Take a wok, heat 3 tbsp of the oil and stir-fry the pork briefly. Remove.

* Now heat 1 tbsp oil , add salt , fry vegetables, them mix them with pork.

* Turn off the heat.

* Let the filling cool.

* Place some of the prepared mixture at the center of each spring roll skin.

* Fold its upper edge over the filling and turn in the 2 sides.

* Roll them down to the bottom.

* To seal properly,brush the bottom edge with the flour-and-water paste.

* Deep fry the spring rolls in frying oil, make them golden.

* Serve them with sauce.
